Hot Chocolate Cake





100 gr unsalted butter cut into pieces

170gr milk chocolate

30rg dark chocolate

4 eggs

¾ cup sugar

1 sachet vanilla or 1 teaspoon vanilla extract

½ cup all-purpose flour

¼ teaspoon baking powder

(Optional) Ice-cream for serving



Preheat the oven at 190 degrees Celsius.

Grease a 22cm round spring-form backing pan.

Place the butter and chocolates in a heatproof container over a saucepan with simmering water (the container should not touch the water).

Stir until the mixture is melted and smooth.  Remove from pan and set aside to cool slightly.

Beat the eggs and sugar with an electric mixer on high for 2 minutes until the mixture is fluffy.  Mix in the vanilla. Reduce the speed to low and stir in the melted chocolate until it is blended.

Sift the flour and baking powder over the chocolate batter.  Stir until just incorporated.  Put batter in the prepared pan.

Bake for 15 minutes (edges should look set and center is soft).

Cool the cake in pan for 15 minutes.  Release the sides of the pan and remove them.

Cut the cake and pieces and serve in plates with a scoop of ice-cream.
